Ingredients

Pappardelle are large, very broad, flat pasta, similar to wide fettuccine, originating from the Tuscany region of Italy. This pasta, made fresh everyday is two centimetres wide.  And is perfect for coating with a fine Italian sauce.

Ragu can translate to wet in Italian making Beef Ragu an Italian beef sauce. Ours is made from brisket, skirt, and flank. Its slowly cooked for up to 18 hours with diced root vegetables like carrots, celery, onions, and potatoes. With generous amounts of tomatoes and red wine making the sauce we then add a mixture of fresh hard herbs like thyme and rosemary. We shred the beef to help it coat our pastas giving it a specific texture. Its earthy flavours will melt in your mouth. So good!
